Melomels
Blåbær - Svartbær Melomel
Bottled in November of 2005. Higher honey content, aging slow, but coming
along nice. Good honey flavour, blueberries are also prominent, but the
blackberries are completely hidden.
Blåfarge Himmelen Melomel
First batch. Taste was OK, very inebriating. Later known as "Happy Juice"
Fersken Melomel
I wanted to use peaches, but after watching the local grocers for 2 -3 weeks
and not seeing anything that looked good, I went with nectarines. Very
tasty.
Jordbæret Knep
Strawberry with a few other things added for flavour. Coming along great
Kirsbær
Melomel
The cherry & honey mix is good, but the peppers give a really nice zing on
the back of your tongue!
Metheglins
Avslapping Metheglin
Meant to be a relaxing drink, not a celebratory or socializing drink. Leave
tea loose in primary – no cheese clothe or muslin bag is to be used. Strain
out when racking into secondary.
Metheglin Cyser
I was hoping this will have aged enough for our family Christmas party (yep,
made it!). Came out good, but had to kill off the yeasts in this one,
getting a little too dry. Flavour is good, but the apple is a little weaker
than I'd hoped. Tried it again it's second Christmas & it was hands down the
best cider variation I've had.
Mystery peach?!?
Forgot to do my paperwork on this one. Nice flavour, very sweet, just not
quite sure how it got that way...

Flavoured with hops (fuggles). Excellent aroma, can't wait to get into it.
Russisk Te Metheglin
I'm trying to make a fermented Russian Tea. I think it's going to work, it
smells promising...

Basswood & Maple syrup, with a little wormwood for kick.

Indescribable taste, even as early as the first rack.

Apricot Braggot
Interesting flavour. It was good, but I don't think I'd recommend it unless
you really like apricots.
Havremel Braggot
Probably closer to beer than mead. This one is modified from Ed's Honey
Oatmeal Stout from
The Homebrewer's Recipe Guide. Came out great! Very dark, almost black,
strong sweet flavour. Cascades a lot like a Guinness, but much finer & a
little more heady.
Malted Kiwi
I was shooting for something a little like a wine cooler. I missed that
target by a mile, but this was great - wine flavour, beer body, & mead
texture!

Belgian
Double
Great batch, darker than I expected, not quite as smooth as I hoped, but
still very good.
Black
Peach Wine
The only straight wine I've tried so far.
Celis White
Very light feel, mildly fruity flavor, the orange & coriander were
noticeable but not recognizable.
Flanders
Brown
Very popular. This batch was kegged instead of being bottled, & it didn’t
last long at all! Very rich flavor, nice cascade.
Firecracker
Red, #2
Very good, but not as good as the first firecracker batch (2005).
